Is there an app similar to ShutUp10 for 20h1? BTW I don't see much popularity for ShutUp10 here. Is it not really working, or unnecessary? Mainly on 19h1 I wanted to block updates and disable searching the internet from start menu when I want to find a program by its name.
Enable it back, that can be a little problematic sometimes. I think you should focus first on, what you want to keep and go from there. But you can always use Windows image backup to revert changes.
For Privacy on Win10 one must delete all hidden scheduled tasks on every boot . uninstall all bloated apps that came with win10 . disable every option at privacy tab in settings. in last disable un needed services. thats all.

Most likely. But make sure to check, if Defender's updates are still working after restart, it might be connected to windows update services. Switch recommended settings. (Base Privacy switches + "Telemetry" blocker rule). That should be fine, telemetry block rule should not disable windows updates, but it is questionable.
