Any up-to-date version that satisfies your needs.
Personally, I am using Windows 10 x64 Pro version 2004-19041.264
If You have genuine Windows 8.1 Pro, I would recommend Windows 10 Pro, if possible 64-bit.
But everyone needs to know for themselves what is right for them.

Straight up to 2004 if you want the new 'hardware accelerated gpu scheduling'. Though I tried it out and did not notice any difference/improvement in games...then I went back to LTSC 2019 (1809).

If you plan to strip bloat out, and don't absolutely need the 'Store', I'd just go with LTSC 1809. So much easier and less...heavy feeling'. Hell, I'd even go with LTSC and add the Store if I needed it. But I hate bloat and boat loads of apps I don't use. Then you don't have to worry about new garbage getting rammed down your throat 2 months down the road. Any non LTS version is like having a war on my PC where I remove and tweak things and M$ fights me and puts them back and changes my settings, etc. etc.

Edit: Oh yeah, and whatever build#, I'd go with the Enterprise version so you can set Telemetry to NOPE!
