Client logging into an older server. Are 2008 GPO settings still used?

Mixture of 2000 and 2003 servers. I’m going to add a Windows Server 2008 DC.

If I configure some of the 2008 GPO settings such as "deploy printers" and "network mapping", would they still work if a Windows 7 client authenticates with one of the older servers when it logs in?

I understand that an XP client would need Group Policy Preference Client Side Extensions but most clients are Windows 7

Does W2000 and W2003 are already DC or what roles do they have ?
