Win 11 imposes now the use of Edge to view PDF files! All changes are cancelled after reboot. Has anyone found a workaround?
I have Adobe Acrobat Pro installed, and PDF files open from File Explorer with Adobe Acrobat Pro. Now if I'm in Edge and click on a PDF file, it will open in a new tab in Edge. Chrome does the same thing.
In my case, whether it's on the desktop or in explorer, each PDF opened in Edge instead of my default software (I think since the last update of either Windows or Edge). And Edge was not active at that time. Restoring my default programs with the "Default Programs Editor" software worked until the reboot.

@ ohenry and Procrastinus ... Are you under Win 11 Home? I tried MSEdgeRedirect recommended by Carlos "Emperor of Ice-Cream" without success for this use. I still managed to keep my default PDF software by changing the registry key permissions here : HKEY_CURRENT_USER\Software\Microsoft\Windows\CurrentVersion\Explorer\FileExts\.PDF.
Ok, i'm under Win 11 Home 21H2 build 22000.832. I also noticed that I can no longer set another browser as default. If I modify the permissions of the registry keys .Htm and .Html at the same place as for PDFs, Edge returns to default after reboot. Not that problem with you either?
