    You've planned well.
Education edition is already minimal by default, best refrain from low-level tweaking as there is no guarantee "required software" will work anymore.

My Bad. I thought there would be a difference in size without checking.

    Great.
Should i avoid optimize-offline and/or Github debloat scripts all together ?
I just wanted to remove MS apps which I dont use and wanted to sort out Telemetry (if that's possible)

Experimenting will all sort of tweaking and sharing the results is heavily encouraged, but not when it's your "production" PC that you worry about software.
Education does not install 3rd-party bloat. The few MS apps can be disabled safely afterwards with a powershell command.
Telemetry again it's just one policy to switch.

HWID or KMS_VL_ALL both will activate all consumer and business + ltsb & ltsc SKUs.
I prefer YAOCTRU + YAOCTRI for office 2019.

@abbodi1406 I can't find that reg hack you posted to prevent Edge Chromium from being installed when updating to 2009. Can you please post it?

    There is no such registry

DoNotUpdateToEdgeWithChromium only prevent getting it via WU
but 20H2 Enablement Package already contain it

At least you can fully uninstall it afterwards for now:
    Code:
    # copy paste in a powershell (admin) console window to uninstall Edge
     '',' (x86)'|%{try{start $(dir $('C:\Program Files'+$_+'\Microsoft\Edge\*setup.exe') -recurse -ea 0|
     sort LastAccessTime|select -last 1).FullName -args '--uninstall --system-level --force-uninstall'}catch{}}
    # prevent update
     reg.exe add HKLM\SOFTWARE\Microsoft\EdgeUpdate /f /v DoNotUpdateToEdgeWithChromium /d 1 /t reg_dword
    # done

I utterly detest the system as a whole, even LTSC, which I run ATM, but it's the least hassle, so it does it's duty. Too many hours of trouble, lost sleep, and disgust, messing with this turd, and it ain't gonna get better, nope. It's a downhill slope all the way, with MS constantly adding utter nonsense, and preventing users from having an OS/System the way they want it so.

Linux seems the better choice, but that in itself, brings problems, and a new learning curve for most, so not ideal, unfortunately, although it has improved, and is more user friendly than it ever was.

I'm at a stage now where I'm in limbo, aka, don't know what to do, or where to turn, as regards my base system? I'm tired of fighting a losing battle with Win10, done in with it all, to the point I really just don't care any longer, and maybe that's a good thing?

You only have to buy one of the latest laptops to find out, just how MS control every aspect of what you have just bought into, and it leaves a bitter taste in one's mouth, more so if you have spent a good whack on said device.

Windows 7 was Microsoft's last pure desktop OS. Since 8.1 the OS has been hybrid with touch features and with some background services to support this. However in 8.1 this does not affect performance whereas in Windows 10 these services only grow in number and consumption of resources.

Although if you have a not so old PC you can remove Windows apps and disable some services and tasks and use Windows 10 perfectly.

An SSD also helps if possible especially if it is a laptop. You can use hard drives with 7200 RPM of at least 1 TB that will also perform well (I only have experience with desktops I don't know how laptops do).

Otherwise Windows 8.1 is a better option.

About Linux I think it also has its problems but it is perfectly usable if it is not for games and I do not recommend using Ubuntu (with Gnome) unless you have a good PC. Its flavors (Kubuntu, Xubuntu...) or Linux Mint are much lighter.
