    There is no N edition available because MSFT isn't forced to have one in your country ;)

    I remember few builds back there was an option inside Windows Defender to "block suspicious apps beahavior" or something like that, but now that option is not present, since when its gone ?

    the block suspicious behavior is in the latest build, I believe it is exploit settings.
