It's not possible to downgrade to a lower build. Only to upgrade to at higher build or newer version. You have to make at fresh installation
Open Regedit, go to HKLM\SOFTWARE\Microsoft\Windows NT\CurrentVersion, change BuildLab to 26100.ge_release.240331-1435 CurrentBuild to 26100 CurrentBuildNumber to 26100 LCUVer to 10.0.26100.1 Run setup again, do upgrade. Probably just one of parameters is checked, I guess CurrentBuild.
Agh, I forgot that 26100 setup is complex now. It doesn't allow edition change for instance, if you need to upgrade Enterprise/Pro to EnterpriseS or Datacenter to Standard. I would try some trick and post few hours later

Im trying to install Server 2025 on real hardware (i7-7700 12GB Ram SSD Crucial 512GB) and the setup stuck on the screen "Searching Disks" with the error: "Windows Setup encounter an unexpected error. Error code: 0x80070005 - 0x4002F" If i try to install on Virtual Machine the same iso install and work normally.... Windows Server 2025 - 26100.1 iso Any ideas? Im testing and if i install Windows 11 and inside him mount the Server 2025 iso and run the Setup, Server 2025 installs and work.... Im trying using Rufus or Ventoy to create a setup in the USB but the installation always stucks on the error in "Searching Disk" screen....
