I confused, what's the difference between the new consumer and business editions and what happened to the old home and pro?
Consumer editions are non VL editions meaning they will only accept key for retail editions like pro,home etc & depending on the entered key they will install the appropriate edition.Same for business editions which only accept VL keys & install editions like enterprise depending on key.
For better understanding: difference between the ISOs basically is the pre-installed key. Consumer = Retail key and Business = gVLK (generic Volume key). In previous releases Consumer was the normal ISO and Business the VL version.
Would assume your Win 10 is activated by Digital License which is a permanent solution where the usage of gVLK with KMS would need renewal and introduce more pain than gain .

After the update it keeps trying to reset my default browser to edge, also resetting various other defaults Photos, email, pdf and others I can't remember
There was no such option. I have successfully update my Windows, through, but not directly - i first upgraded to 1607, and after that to actual version.
You were upgrading, @s1ave77 thought you were clean installing. But either way, there should be no keys needed for build to build upgrading.
