You can use even XP Pro to publish remote apps, just use remote app tool, which is waaay more efficient and simple to use the the official MS way
Not tested personally multiple connections on windows clients with rdp parch brokers and alike, but I think it should work. In the worst case just turn the client in server to have the right product policy (perhaps, even if you want xp32 client, is better to start from 2003r2 server, then convert it to client. You will get a 5.2 kernel, just like xp64) BTW is easier to try by yourself than ask, the utility is 500k or so and requires no installation or guru skills) I can't post links (yet) but be sure that google does a good job if you search for remoteapptool
