Hi guys! I just freshly installed Windows Server 2008 R2 Standard, I want to update it using the latest May Monthly Rollup from MS; but the problem is I get an error saying "Failure configuring Windows updates. Reverting changes." I have activated Windows and installed the prerequisites (SSU, ESU, and SHA-2) already as stated by the site. Do you guys know the fix to this?

Did you install the BypassESU bypass?

Edit: I see you've found the topic already.

Alternatively, the SiMPLiX pack should work on Server 2008 R2, too, although I've never tried it.

Try disabling SmartScreen and then open installer from cmd as admin rather than double clicking through downloads to skip past MS blocking downloads thing.
