    Hey,
I read yesterday that laptops coming with Home Premium can simply be updated by putting in the Ultimate SLP key for that brand.
I tried this on a samsung, and it worked perfectly.

Now what i want to know, is there ANY chance at all of this being detected? Like does a SLIC ever state what version of windows it is for, or is this method 100% foolproof and undetectable by WAT etc?

It's a legal method, it will never get detected. SLIC 2.1 is just for oem activation for any windows 7 edition.

What about brands that don't have a OEM Ultimate version sold e.g. MSI - an Ultimate Dell key works/activates on an MSI slic/cert but would it trigger the updated WAT?

It will work as long as you used a OEM slp key that is :
    . not blacklisted by microsoft
. preferably the one designed for the brand of your PC/Bios/Certificate
