Take a look at MSMG Toolkit to remove apps. Seems a bit daunting at first but it's not that bad, it's menu driven and includes options to remove Cortana, Edge, & OneDrive but any valid package can be specified in a txt file for removal. *Some* stuff can be removed with just powershell or complicated scripts after install, I used to have one for apps that were allowed after Windows was installed and others for more complicated stuff, but MSMG Toolkit was a much better solution.
