If these folders are empty and anything doesn't wait for restart (ie maybe some update before is not finished and still is waiting for restart)
    %windir%\SoftwareDistribution\Download
    %windir%\servicing\LCU
and also sfc.exe /scannow don't show any error
then is one question - maybe You have third party antivirus, that blocks updates. If You have, turn it of or uninstall and restore Windows defender and then try again.
But this is all just an opinion based on similar problems in the past.

Can you run the dism command manually or get the same error?

Some users report similar errors. MS has been notified.

If you can wait, there should be another CU next Tuesday.

    Hi

I've had run again all commands and I'm getting these errors

    SFC.PNG
In English: "found affected files, but some could not be repaired."

After running again DISM commands, I'm getting this strange error. The Sources directory is fine so I don't know what could be the problem.

    DISM.PNG
In English "Source files weren't found" Error code 0x800f081f

Now is clear why You can't install update.
Now is option => open settings => Update & Security => Recovery => Reset this PC
However, if the shadow copy is also damaged, I would recommend downloading and using a new copy to avoid any new problems.

Other updates worked fine. I don't understand why I'm getting that error. I'm going to wait for next CU then

I'm pretty sure you can't update anything anymore and the problems will start to increase every day. Probably one day there will be a situation where you can no longer improve anything with the measure I mentioned before. Then all that is left is a clean installation with all the programs reinstalled.
But decide for yourself what you are doing.
