Office 365 HomePrem releases an offline image every six months, the latset one was released on October (Version 2008), but its bootstrapper (setup.exe In the root directory) supports Windows 10 only. The previous image was released on April, maybe it's the latest release that can be installed in Windows 7, but I replaced the O365HomePremRetail.img by the latest one. I can get the other files needed by MDT, but the setup.exe in MDT now can't be used in Windows 7, so I have to request the setup.exe in the previous O365HomePremRetail.img. Its version is 2002, 16.0.12527.20482, released on April. Kind regards.
Last office C2R setup files version to support Windows 7 is 16.0.12527.21416, you can't make newer version work by just changing setup.exe Download 16.0.12527.21416 installation files with YAOCTRU and install your preferable edition of office with YAOCTRI.
