Ye I still can boot Windows 8.

bcdboot X:\Windows someone already advised on tenforums but no effect, though EasyBCD and msconfig shows up both menu entries correctly (Windows 8.1 as default)

The problem shown up when I set Windows 8.1 as default -> boot manager switched from Win10 to Win8.1 which I suppose is somehow corrupt/deactivated/missing. Win10 boot manager seems healthy but I don't want to use it as default.

You only have one boot manager and that is what you are looking at regardless of from which OS you look. I don't think you have any choice but to set 10 as the default.

You could use an alternative boot manager like Grub. If you install Ubuntu (any flavor) you get Grub with configured in a way that it is compatible with Secure Boot (a shim is started before Grub and this one is signed).
