Which version of windows 7 should i get?

    Hello, im bored of xp, and i have an iso of the "rtm" from late july. which version should i use? ultimate seems kind of bloated with processes, so i run kind of slow..
    my specs:
    MSI 7350 motherboard
    2.56Ghz Core 2 duo Wolfdale E7200
    2 gigs of ram
    radeon x600 128mb PCIE vid card
    40 gig hard drive

    and also, how do i make it so i can select which version i want when i open the setup?
