Hello, we have 50 PC with win 7/8.1 in my company, i saw today the little windows icon in my task bar asking me to reserve my free win10 license. at the end i have to insert an email adress, can i use the same email for all the computers in my company ? or will it cause some problems ?

You don't need to type in any mail, that's just some stupid confirmation mail or something. There is a "don't send me s**t" text right under it.

Does anybody know how it will be managed in WSUS ?? if i want to block the update and wait a little bit before releasing it.

If you use Volume Licenses in your company you'll have no problems and could also use fully automated upgrade. If you use single licenses it's also no problem, just each machine needs to upgraded separately and that need a bit more time. But with just 50 PC's, it'snot an big deal at all.

All PC were bought with windows 7 pro installed (HP Prodesk 400 G1, sold with an upgrade DVD to win8.1), so it's OEM in my case. They all have the same Win7 key.

I wouldn't see an problem, except HD didn't has an new contract with MS for Windows 10! Just all Upgrades will need to be done manually one by one.

There wouldn't be a problem. All you need to do is to deploy the Upgrade via your LAN!

That's the purpose of WSUS ! automatically deploy the updates via the LAN.;)
Anyway actually you can't deploy it into a domain for this reason:
