1803 with the latest update since it has some fixes for the large memory allocation and standby cache bugs. 1809 in any shape or form is full of regressions regarding gaming. As for editions, Education ftw!
except for the latest WDDM driver version 2.5 I think that will not fit on that version if I'm not mistaking
