Windows Server is more secure than Windows 10, isn't it?

Nope. It's just set up in a more secure and restrictive way, by default.

No one can say you should...but quite sure you could. I use Word, Firefox and Tor...no problem.
The only thing I haven't been able to install ( yet :) ) is backblaze, else it's working very well as main workstation.

+1 Once you tried you never look back.
But maybe w10 is more suitable as a general/multi tasks OS.

Windows Server removes all the broken UWP/Edge crap
    More stable
But in some old testing server has lower performance, this may be related to some background optimizations that optimized for server tasks rather than desktop tasks... The performance degredation was mostly in gaming. Further Easy anti cheat/battleeye don't normally like Windows Server
For the normal software you use, wanting stability and performance, I reccomend linux.
    Replace MSoffice with Libre Office.
