You do not split them. You write on double layer DVD. Inverst in new writer, some disks Of course you could it rar split them, but it will be not installable this way (so kind of pointless) sebus

the essentials one will fit on a normal DVD and the other one you could just pick up an 8gb flash drive and put the ISO on it. i did it with Win 7 but on a 4gb flash drive.
Here's the delta to convert the SBS Essentials evaluation ISO to the MSDN ISO. Well, according to the HTTP response headers when downloading the SBS 2011 Standard evaluation ISO, its MD5 hash is 05823ec5bd2cb2ea4d9322a786632718, the same as the MSDN ISO. No point finishing the eval download and trying to create a delta then as they're the same already. did you even look at the minimum requirements for installing either version. standard wants a minimum of 8gb and essentials wants a minimum of 4gb. both need at least a 160gb of free space iirc.
Windows Loader works great for SBS 2011 Standard (downloaded direct from Microsoft). Make sure you don't download a trial version.

Yes, 160GB is the recommend but, the smallest is 120GB any less and no go. It has been along time and I forgot if I tested smaller sizes until I found 120GB would work. Note it will give you an error on install but, allow you to continue. Trust me you will need a large hard drive so do not think if you use 160gb you will have tons of free space. I think mine filled to about 80GB after all the Exchange and WSUS or whatever they call it. OH ya, and Daz's great loader worked perfectly every time, even in esxi 5 VM.
