I think just like you however I'll stick to 8.1 for the moment till 10 receives an upgrade at the end of this year and more refined anti-telemetry solutions see the light.

Same. I will NOT be upgrading to Windows 10. Hopefully I'll never have too as I'm trying to switch to Linux Mint as my daily OS for everything but gaming. So far, so good :)

Both yes and no actually. I'll stick with Windows 8.1 Pro on my everyday/job computer but gonna install Windows 10 Enterprise LTSB on my gaming rig.
I have never used Windows 10 before so I gotta see what it's all about, from what I have seen in screenshots it definitely looks like it's something for me.

I think it will go smoothly, everything is prepped and ready to go just need to get back from my vacation first....

I'm back to windows 8.1 after trying for 1 month windows 10, that's my experience:

I use de-bloated versions of windows 8.1 and windows 10 (using install_tweaker and dism): removed all metro apps, defender, cortana, onedrive, and other useless stuff.

With this configuration both windows are pretty fast but here are windows 10 problems i see:

    1) windows 10 start menu, volume app (and ui in general) are slow, clunky and not snappy compared to windows 8.1 startisback and volume app.
    2) After booting, windows 8.1 memory use is around 680mb, while windows 10 uses much more...between 700 and 800 mb
    3) After using and closing some programs like a browser (and no other apps running), the memory usage in win81 goes down to ~600 to ~700 mb while in windows 10 is aroud ~800 and ~900mb
