It's poosible for all builds. But I don't have\use that script anymore, sorry. I can answer what I can only.

 

25398 non-official LTSC License has not update. Therefore it can be "replaced" without affecting custom CU update. e.g. IoTEnterpriseS Volume_GVLK and OEM_NONSLP.

Q: What about Activation?
A: It depends on Spp & PKeyConfigVersion. So, you have to test it yourself.

PS:
A Key may be accepted "OFFline", but not necessarily when "ONline".

xinso, - tell me please, if I reconstruct Enterprise SN and want that to have same modern apps as original, what is the best way:
1) Do a reconstruct, taking Ent S OEM iso as a source and dism change editions,
or
2) Do a full reconstruct from Pro/ProN and later do magic with WinApps?
or
3) Do reconstruct from Ent S N Eval?

Of course we don't know what would be included in shipping ISO, but your opinion is valuable.

And can you give me a list of apps to delete after? As I understand it, Modern Apps are not in any MUM or unattended xml, so I need to manually clean them up?

 

UUP script has options in ConvertConfig.ini for you to customize CustomAppsList.txt.

It depends on whether or not "Media features" is installed.
If not installed, it is N (alike ProN).
If installed, it is not-N (alike Pro).

UUP script author is the best person for such a matter.
