    Windows Server, historically has been much leaner than the client OS at each respective time. Leaner, less bloat, and "alleged" higher uptime, stability, etc.
    People have been doing this since Server 2000/2003. ( hell... maybe even NT 4.0.. but I'm not aware if the history of this is that far back )

    No idea if was worth at the time, but NT4 and W2K could be switched as well. It was even faster than my SKUwitch, using tiny utilities like NTswitch or tweaknt (that worked until XP/2003) literally ONE mouse click one to go back and forth

    For Windows Server 2003 (>=SP1) x86 a direct offline convert script to amd64 could also be considered. It would be an idea for a new project, as Windows Server 2003 x64/amd65, or later version do not support at all upgrading from x86. Who is interested ?

    Agreed. I am typing this from my own computer which is now running Windows Server 2019. It works very well, as good as (or better than) Windows 10 1809 LTSC, which I also have on my computer.

    Of course, it is also supported for 10 years, far longer than the "normal" versions of 10 and 11.
