Since disabling 3D acceleration in VMWare, rebooting, then shutting down and enabling it again, it seems to have fixed all the explorer / menu crashes
Installed an my Laptop Acer Aspire 4752G, this time as clean install on an 750GB HDD and that install was finish after 17min! That were the fastest install I had till now on an normal HDD. Everything works. Had just to install 2 drivers, one for the Nvidia GeForce 610M and the other for for Broadcom Memory Stick. There's also one more, but never worked, even not with 8.1 and that's the Broadcom xD Picture Bus Driver! Anyway that didn't bothers me and I didn't expected it will ever work again! Same applies for the HP Mobile WiFi Mouse which I never was able to get working on Windows 10 any build. It works up to Windows 8.1 after I modified the driver a bit, but that didn't works on W10! The install procedure is a bit different from other builds, and it's better too. Have to install some apps now and see what'll going on.

Does anyone have the modern apps issue that open small every time regardless of resizing before closing?
Does it happen on real hardware? I noticed disabling that 3D Acel in VMWare fixed that from happening too
