No, if you want to stay 100% legit you need to buy a LTSC key (which is obviously more expensive than Pro ones, given you pay the Home/Pro SKUs mostly with your data, not with your wallet)
Sorry for the noobiness, but is there an upgrade path from 'Win 10 Enterprise LTSC 21H2 19044,4291' to anything newer (still Win 10 LTSC) that isn't requiring a format?
LTSC 2021 is the last W10 LTSC, so if you want upgrade you need to upgrade to W11 LTSC, and obviously you can in place upgrade to it. But even if you want to have a fresh installation there isn't any need to format. NEVER format unless you have a *really* valid reason to do that (selling the HDD, a nasty virus hard to remove or other uncommon scenarios)
Can I update the IoT Enterprise LTSC version with Cumulative Updates on Patch Tuesdays? If so, are those updates automatically applied, or do I come to this website to download the updates manually? And do IoT Enterprise LTSC versions receive Defender updates?

Use Group Policy Editor (gpedit.msc): computer configuration -> administrative templates -> windows components -> microsoft defender antivirus -> enable "Turn off Microsoft Defender Antivirus"
Millions? most of the global users don't even look at WU and have no idea what fails or installs. For me personally it only failed on a laptablet with just a 32GB emmc drive and hardly any space to run x86 win 10 anyway
Millions: Well, I am sure that I am not the only one using MS Win 10 IoT Entrp 2021 in these days, because on this particular OS for e.g. this KB5034441 bug and from my experience is always present.

As dozen times explain multiples choice : 1- Leave it 2- Hide it 3- Resize your WinRe partition 4- Custom install W10 without create the WinRe partition using Diskpart or a other partition manager 5- Use an other Operating System
