Tried win11 LTSC, Time to downgrade back to the old good and tested win10 LTSC.

Are there currently any downsides, like issues with running apps, gaming?
Xbox app appears to complaining about windows version, any other known apps not supporting old system?

You will probably have to rerun the activation script, if the build is 19044.2788+ it will accept KMS activation.

How is Windows 10 LTSC IoT Enterprise extended support acquired?

2021 IoT LTSC will get support until 2032, there will not be an ESU extension for it. Normal Windows 10 22H2 SKUs will get a paid extension for 1 year (customer) or 3 years (business). After the 3 years, LTSC updates will most probably be barred in these SKUs.

We really hope our dear developers on this forum, can make a "Bypass" like they did with Windows 7 and Windows 8.1. So we can get updates from LTSC (2032-01) to the "normal" SKU (22H2).

After Windows 10 Enterprise LTSC 2021 installation, how can I turn it to IoT LTSC and activate it ?
    Thanks for the assistance rendered!

Carlos Detweiller: I just change the product key and that will do. How long would the key last?

The key is only for switching Editions, it's an official and publicly known default key. The switch to IoT is permanent. Nothing to do with activation.

I'm building a new PC and want to use Win 10 LTSC. A couple of years ago I downloaded what I think is LTSC 2021 [21H2] - file name ends with "d289cf96." I have it ready to go on a flash drive. Is this still the latest 10 LTSC version? Will it work OK with Intel Arrow lake CPUs and B860 boards/drivers?

There is only one ISO version released, build 19044.1288 (the ISOs can be found at the OP of this thread, the Updates Overview too.

OK good, then mine is the most recent.
Do you know if it should be OK for the latest hardware like the Intel 265K and motherboards? I assume it will be, but don't know for certain about drivers, BIOS updates and such.

Check your hardware driver support page, if it mentions 10 is supported, if yes, then all should be fine.
