I presume you're chose Express Settings during install, so Apps updates automatically. Problem is, if they fail to do so, you still won't see them in the Update list. So, you could go to Store (green one) and deselect automatic updates (this will apply to Store (Beta) too), o r just go to Store (Beta) --> Account Picture --> Downloads --> Check for Updates --> now click somewhere, Movies & TV for example and go back to Downloads very quickly. You'll probably see Mail app failing to install.
I did what you told me to do and, worst than that, the Store (Beta) app is failing to install Beyond that, other apps are failing too, like Video Preview etc.
Ha ha. First of all, try closing Store, running wsreset.exe and restarting your system. If that won't help, run following script in PowerShell x64 with admin rights. Well, it did work for me on build 10061 and helped to solve problems with Video Preview, Cauculator and some other apps.

I have found just like with windows update you have to try a few times. Maybe the update servers are limited and there are millions trying to use them. Mine crashed a few time but ultimately worked. I had 8 or 10 office updates in winupdate that took at least 5 or 6 trys before they ran and completed.
