I am running build 22621.675, I am so confused about all the updates, I don't mind beta updates or anything, are there any more updates I can install to bump up this version further? I see people running 22623.xxx or something so I dunno

You can but be aware of the updates installation problems with rp/beta channel updates after running cleanups.
it wouldn't let me install beta update over my current build, dism ended with Error: 0x800f081f and win10ui said the updates weren't valid for current os
Make sure the correct SSU (440) is installed first but the error code is for those who have cleaned up their installs, to get the beta channel updates installed you need to perform an inplace/repair upgrade using a 22623.730746 ISO (preferably uncleaned).
