You have to look in the Insider section in Settings, in the Updates section. If you just downloaded the ISO and ran it, you probably won't be enrolled in any Insider channels unless you already was beforehand.
I just downloaded the ISO from UUPdump and installed it in a VM with a local account, no login of any kind. I was on 22000.120 when installed and now I'm on 22000.168 with Windows updates installed and I wonder what channel is it

Check the Insider Preview settings (updates will be offered without being enrolled into any channel).
Heard on a computer show that M$ will allow Gen 7 CPU's as a requirement for W11. They will also allow AN IMAGE OF W11 to be loaded on most machines, right down to duel core CPU's - basically all computers, BUT MAY NOT SUPPORT IT FULLY, whatever that means.

Not sure why, but the uupdump website returns an empty file list when trying to download any of the .168 files. Edit: seems to work when only selecting the cumulative update option

That is roughly the same as what I heard a few hours ago. While not exactly the same its close enough. The one thing you dont mention was M$ says it wont fully support Minimum requirement machines, BUT I still haven't heard what that means yet.
