What do you really want to do, what result do you expect or what does it mean to "disable"? You can set it so that it doesn't start automatically, that it doesn't update anything automatically, that it doesn't update at all anything, etc. and the next step is to completely remove the store and then put it back when you want to use it again. The Microsoft Store is a standalone app and is optional, but I don't see how it would bother you if it's there.

I don't understand your concerns. If Store app is installed, there are no background processes and it won't run by itself. WU will update any installed UWP apps, regardless of whether Store exists. This can be disabled by: Code: [HKEY_LOCAL_MACHINE\SOFTWARE\Policies\Microsoft\WindowsStore] "AutoDownload"=dword:00000002 Appx provisioning has a separate set of app services running in the background. You should leave those alone. They will never run Store by themselves.
