It is always very nice to have a tool to do things for you, but you should have knowledge of what you are doing first. There is plenty of information on the internet about everything the MSMG toolkit does, and you should try this stuff out manually. I actually studied his code at times to see what was going on.
He means apps along the lines of Settings (And Windows Security Center if you didn't remove it with the toolkit) which can't be removed/unpinned afaik.
This toolkit doesn't convert Windows 10 Home to Pro Workstation and Pro Education. When installing it on Hyper-V it shows as correct edition on editions select menu. When it finishes being installed both still appear as Home edition.
If i could find the option i would test it, but i can't find it anywhere. You don't need one. I'm talking about apps like Windows Defender Security Center and Mixed Reality Portal.
I got the same result for that. But I forgot to mention I used Windows 10 Fall Creators Update 16299 with updates kb4048951 & kb4048955 already integrated.
