Pro for Education is now a gimmick for snob school principals. In practice is a major downgrade from pure Education. It was intended to cover "discounted" Pro (MS took billions for governments yet they still tried to ripoff education institutions). Pro for Workstations is now a gimmick for snob rich people with multi-socket cpu's and terabytes of ram. Scientists know better to use the real deal, Enterprise, for such unreachable higher-end hardware support. Education is the best MS has to offer privacy-wise because it's subsidised by governments worldwide. Also the reason why it's not trivial to license (you need to be either a student or an worker in an eligible education institution). Enterprise LTSC is better bloat-wise out-of-the-box, but not privacy-wise out-of-the-box. And it's quite expensive to license. The 2021 one is quite insidious compared to 2015 and 2016 editions (don't care about 2019, it's a horrible build). Normal Enterprise is meh without debloating and serious work at shutting up stuff (normally the enterprise sector has an IT department qualified to deal with that). In some cases, it can be worst than running Home or Pro, because MS makes assumptions you are qualified to run it and won't "protect you from yourself" as aggressively as on Home and Pro.
As I wrote many time I consider 1809 the worst build of the whole W10/Server history, then your mileage may vary depending on your needs and your specific HW. 17763.1 is not more unstable than updated 17763.xxx . It has a buggy installer that affects in place upgrades (a minor share of them) leading to a user profile loss. Which has nothing to do with stability
1809 is exploitable (EoP, data sniffing, the whole jazz) on pre 4th gen Intel at least (even the first batch of haswell are not fine), marginally better than 1803, 1709, and 1703 (that are even worse). Unfixable without breaking driver-level compatibility. I would not run any of them without a strong internet security suite (not just av) or hardware firewall. 1607 and 1507 despite being older, are not broken. 1903+ is where "proper" windows start again (but it's a two-edged sword, since that's where chredge push intensifies as well).
use latest 1809 iso public consumer base / and make ltsc install.wim up to date replace install.wim from consumer iso with ltsc install.wim enjoy full stable iso edit replace ei.cfg from consumer iso with ltsc ei.cfg
Isn't more obvious to update the ISO to the level you need? BTW all my installs are on native.vhdx if something goes wrong during an in place upgrade I just throw away the affected vhd and restart the process

Question is do I add updated .wim to consumer 17763.1817? Or do I add updated .wim to original extracted LTSC ISO along with boot.wim from consumer 17763.1817? Cos your 2nd post contradicts 1st post

I'm trying to find the difference between Enterprise vs Education but all I see is that they are exactly the same only Education is meant to be used for Education entities (obviously you can use it for whatever you want) and Enterprise is meant to be used for businesses? Is there something I'm missing?
Government subsidised. That should be enough for a full stop. No other edition is as private out-of-the-box (this is always put to test in education strongholds around the world). And not just client-side. No 3rd-party bloat by default. Telemetry tamed by default. Education policies that actually work (which is a super-set over Enterprise, not the other way around). Highest upgrade coverage. It even used to have a rigorously curated alternative Store (rip, ms took advantage of snob school principals to sell them parity with the s**tty consumer one). Do note that the proper Education "experience" is only achievable via legit school account. But even without it, it's still the best, imho. But "pirates" around here will invariably chase the s**ttier Enterprise LTS* each release (and it's quite s**ttier without harshly managing it), when they could legally get Education for free (being a student or work in education is only required at the time of "purchase" - it does not expire once you graduate).
