Upgraded my laptop from legal 8.1 Core to 10 Home version, was disgusted, switched to Enterprise LTSB, totally happy.
I'm using Enterprise LTSB N, no regrets so far. Really clean Windows 10, and all tweaks are possible on it. I installed the Feature Pack "Windows10-KB3010081-x64.msu", to get media stuff, which makes everything work perfectly. And just removed the Windows Media Player component. (Along with IE 11 at the same time.) So, no Edge, IE, WMP, or any modern app like Photos or something. Just plain and clean. Love it! The administrative possibilities to block Microsoft spying on you are definitely a great bonus.

For good video/audio support, the K-Lite codecs (bundeled with the great MPC-HC) are more than enough. The MS package installs more stuff than just codecs, say drivers related to DLNA, BT Audio and so on. So for some programs the klite package could be not enough, but for basic needs it's sufficient.
Oh, I also got the K-Lite codecs installed, figured it couldn't hurt. And I am using BT headsets so, there is that... I also heard it was necessary for games? (The Feature Pack)
I;m sure that sooner or later, a game/program/utility will ask for something coming from the MS package, maybe because a poorly written program and not a real need. But until that day I prefer to keep my windows as lean as possible.
Despite picking Pro, I'm also an LTSB user. Never mind the fact that the policy option to allow Telemetry is only officially supported under LTSB, it comes with no Metro applications! (The only one I miss is the Photos app from Pro, and that's only because it supported animated GIF files. I was already using the Windows 7 Photo Viewer for all the other formats anyway.) Better control over updates isn't something I'm so fussed about (I used to keep automatic updates on in 8.1 anyway) but I consider it useful nevertheless when, if you're connected to the Internet, during OOBE, Windows forcibly checks for updates and installs worse drivers. I picked the non-N version because that's what I always do (I'm not going to change my mind on that just because of telemetry) and because to play h264 HTML5 video, Firefox relies on Media Foundation (Chrome uses its own provided build of FFmpeg and my only other alternative in Fx would be to use Flash...). Ain't no codec pack available that's gonna add support there.
windows_10_enterprise_2015_ltsb_x64 it is... The ultimate, clean, modern 100% desktop OS, the true replacer of win7. My modest advice to M$: if you want to score, make a version like this available for home/pro users...
Windows 10 Enterprise. Tried the LTSB version first but could not found much benefit than regular Enterprise and was not satisfied because not having some inbuilt multimedia codecs and no option for feature updates in the future, since I use my computer both for entertainment and work, installed the regular Enterprise and removed some unwanted metro apps from it.
I too am using Microsoft Windows 10 Enterprise edition, but I have just decided to leave it more or less as is and just install the basic apps that I usually use on my "experimental punching bag" laptop, which is the Dell Inspiron 1750. Funny thing is I grabbed the x64 release from a certain place, installed it and activated it via the Microsoft Toolkit application, scanned for hardware changes and the next minute you know, the laptop was literally ready to go. The OS is good in terns of functionality, but the privacy concerns do somewhat overshadow the OS's goodness. As for my reason behind choosing Microsoft Windows 10 Enterprise x64 (via KMS activation), well it is because: - Most games that I am intending to play (not on my laptop, but hopefully on my gaming PC) will need access to 4+GB of RAM. - The Enterprise version of the OS(es) have always been the most complete of the lot so hence I am sucker for completeness. - (KMS activation) I want to try out the OS before I make the step to actually upgrade the Windows 7/8 copies that are lying around as said upgrades will be tied to your hardware, which sucks.
I have installed Windows 10 Enterprise x64 because of group policy support to notify for download and notify for install. Automatic update is not a viable option especially when using 3G (limited quota). Moreover, Enterprise version supports KMS activation which will be difficult for M$ to change (enterprise changes are least probable due to countless reasons) compared to permanent activation which M$ can verify for legibility and may block in future. Moreover, Enterprise version has all options like Cortana, Store, Photos as well as Windows DVD Player (installed manually). There will be nothing lost compared to Pro version.
