Windows 10 Defender

    Is there a way to either disable Windows Defender or uninstall it so it won't be reinstalled on the next Windows update?

    Yes, both.
    disable: gpedit.msc
    remove: remove owner key in defender key in registry + dism remove all defender packages

    Murphy78 used to include a simple "WinDefender-Enable_Disable-Win10.cmd" to disable defender with his win 10 posts, it still works. I don't know if he appreciates it when i post it overhere.

    You don't have to disable Windows Defender. As soon as you install any other AV, it will disable itself and stay disabled.

    This is better than uninstalling it. Eves assuming there won't be adverse consequences for crippling the system, if your AV fails for any reason, you can immediately go back to WD and have some protection.
