Advice? If it scares you this badly and consumes so much of your mind ... don't use it. If you do use it, do the best you can to mitigate the "spying" and stop worrying since you've done all you can. Steer clear of the internet of things since they're all watching you too. Cover the camera on all your devices. Drive and old vehicle that has no electronics.
First things first. Take the time and read some of the posts at MDL. The people here have done a lot to plug up the holes, so to speak. Follow their advice and see what happens. If you don't trust them (I have no clue as to why you wouldn't...), then learn how to use Wireshark and monitor the network output of your machine. If you're seeing packets that are headed out from your machine, then look at the destination. If it's a microsoft server, then take steps to block it. If you're really uncomfortable with it, then do like many others have done. Don't use Windows 10.
