All updates are 26100 based, the 2 in 26200 is only because of the use of the 25H2 Enablement Package (kb5054156).
This is more of a myth than a reality, although the position about the impossibility of updating to and from 26H1 is hard to understand. Nothing superfluous, just marketing.

If I did have to guess, I'd say the path is too long. Normal path limit is ~260 characters (complete path, including drive and filename). Try to make paths as short and simple as possible (no spaces or special characters).
keep in mind that some files being unpacked have even longer filenames, the work folder should be W10UI for example, short, no spacings and no exotic characters. For example, I work in folders called: W10UI_26200 or W10UI_2021_LTSC and never have any problems with any build.
