I tried the site windowsafg, saving the generated file and then updating the windows10 Enterprise LTSC 2021 iso, but an error message appears and this blocks the installation of windows.

I also use Rufus and it works fine, with the autounattend.xml attached. With Ventoy it didn't work for me.

Supposedly, one advantage of using IoT is that it allows you to pick which updates are installed? What does that look like? Would anyone be so kind as to post some screenshots of the differences?
OEM restriction apply to setupcomplete/oobe scripts, not the answer file (which actually can bypass the restriction via FirstLogonCommands) besides, Enterprise/N and EnterpriseS/N editions are exempted from the OEM restriction (but not IoTEnterprise/S)

IoT and non-IoT only differ in terms of activation (HWID -vs- KMS) and support (10 years -vs- 5 years), otherwise they should be binary-identical. You can either disable updates completely, or set Windows to only check for updates (without downloading or installing them). You can't select individual updates via standard built-in tools.
