Updated the OP and second post with the new full tool, bare tool, addons (no changes*) and scripts (no changes*)!!! *Only renamed and re-uploaded for version consistency in the filenames. Info about the new, still to be released, Legacy ISO tool: found a showstopper for enterprise creation, will see what i can do about it asap
Whatever I do, phase 2 of the install basically crashes on me. Is it because i'm using a very modern platform? (Ryzen 2600, Crosshair VIII Dark Hero, NVMe SSD)

I had similar issues when using one of the newer (but some months back now) 'bare tools' and adding the iso's and other files to it - it started ok but always failed early with a message simialr to yours, even after a cleanup. The prior full package worked fine and I triple checked all required files where in the right places. Using the full tool that came out before it and moving the iso's and any other files back to the correct locations (as I had moved them for use with the newer bare tool) all worked %100, every time. It may be worth you dl'g the full tool or an earlier one if still available and trying again. I did report this behavior but added do not bother looking into it as I had a working solution and saw no one else reporting such issues. I used the recommended Win10 and Win 7 iso's and did this on a x64 I5 PC.
Sorry if this comes off as a stupid, redundant question, but will I have to partition my W7 Ultimate x64 ISO as MBR if I want to enable CSM?
CSM will enable you to use UEFI/GPT partitioning for the target drive (where you install the OS on). The USB key needs to be formatted Fat32 or use a tool you prefer to create a bootable UEFI capable USB key.
