enterprise G are locked by policy to english and chinese the best are extract enterprise G policy ( gpo ) and apply to regular windows 10 (iot ltsc 2021 ) or 11 enterprise in italian ( with removed apps store )

nope gpo are restriction only ( like telemetry ) for kms use kms 38 ( activation expiry in january 2038 )

Ok I guess I cannot edit the gpo or other files to make it accept Italian ç_ç what a pity

 

You can
1. install en-US EnterpriseG.
2. install any other edition's license and key. e.g. EnterpriseS.
3. add all it-IT relevant language packs. And set it-IT as default language.
4. remove all en-US relevant language packs if necessary.
5. apply CMGE Group policies and settings if necessary. Or goto https://forums.mydigitallife.net/threads/convert-windows-server-to-workstation-offline.84632/ and ask about freddie-o's Telemetry script.

[Hint]
1. EnterpriseG, "without Windows Defender\Edge\Store" and "0 Telemetry" matter.
2. If you reconstructed any edition with CMGE and its unique settings, any edition can be 0 Telemetry. And available in 38 languages.
