You probably extracted your dvd to the dvd\x64 folder instead of just the dvd\ folder

See from your first post, you said you moved the files from DVD\x64 to DVD Folder.

The script is written this way

    - The source folder \DVD should contain the W81 Setup DVD Files/Folders.

    - The script detects the wim architecture based on \DVD\sources\install.wim

    - For Menu 3, it uses the wim architecture to get the files from \Update\DVD\<x86> or \Update\DVD\<x64> to be copied to \DVD Folder.

    - The change you made to the script has nothing to do with the menu 3 as its used for making iso image and it doesn't relay on wim architecture

    Code:
    set BIOSBoot=%~dp0DVD\boot\etfsboot.com
     set UEFIBoot=%~dp0DVD\efi\microsoft\boot\efisys.bin

    - So at first place you copied the w81 setup dvd files/folder to \DVD\x64 instead of \DVD, so that's why the error came.

    - if for chance the detection of wim architecture doesn't takes place then neither of the menus 123 won't work.

it seems the new wadk is not able to run without getting installed on windows 7 but in windows 8 it's working just by calling the dism.exe. just run this command in the command prompt before running the toolkit

    c:\<foldername>\bin\wadk\amd64\dism\WimMountInstall.exe /install

Not sure whether MSMG confused it with his other tool :D, but should be here:

    Code:
    \bin\amd64\dism\WimMountInstall.exe /install
So you are correct with this :cool2:.

    Still same result
    Code:
    C:\w81u1\Bin\amd64\DISM>winmountadksetupamd64.exe /install /q
'winmountadksetupamd64.exe' is not recognized as an internal or external command
    ,
    operable program or batch file.

It looks like the program has been misplaced, or blocked from being copied/extracted to that location.
If you have security software you might try allowing the program in the settings. Or simply re-setup things.
